Morels grow wild in the UK in the Spring and early Summer- despite several foraging expeditions, though, I’ve never managed to find any. The good news is that they can be bought fresh online- the bad news is that they’re very pricey. If you do manage to get your hands on these delicious fungi I’d keep the cooking simple- they’ve got a meaty texture and taste that sets them apart from other mushrooms and deserves to be celebrated. My advice is to slice and pan fry them in a lot of butter and a hint of salt, garlic and thyme, and then serve on a buttered (I know- butter on butter- but morels deserve it!) slice of white toast. Absolute heaven.

​We had the pleasure of cooking for a real food lover last month. He was passionate about using the best seasonal produce, and was willing to spring for a generous quantity of morels. We combined them with a mixture of other wild mushrooms to make the little pithivers that we posted on instagram last week.

Firstly, a massive thanks to you, Charlie and your amazing team for your exceptional catering, service and organisation for our silver wedding party. Everything went brilliantly and many people said it was the best party they had ever been to which is quite a compliment. We loved every second though I'm not sure my feet will ever recover! I'm so glad the staff had a good experience too, we are very proud of our friends who are all super people.
